This roll cake is one of the old style Hong Kong pastries adapted from the western pastry. Pig fat is used as a substitution to butter, providing a special kind of aroma. And the texture of the cake is slightly more rough when comparing to the western roll cake. In the past, I used to buy this roll cake as breakfast for a long period of time. It is that delicious! And it somehow convinced me that softness is not a must for a cake. The pig fat aroma was what pleased my palate.
