I had quite an early start on matcha. It all started from a trip years ago to Tokyo. I visited some Japanese garden. There are tea houses inside the garden which serves matcha, sencha and seasonal wagashi. The enjoyment of having tea in front of the garden view was almost like a shock to me. It had put a deep impression in my mind. I became a regular Japanese tea drinker since the trip, almost religiously.
As I became a home-baker since I moved out for awhile, I started to explore the possibility of matcha on a pound cake. And, it was not that easy! To have a good matcha cake, it has to almost melt in your tongue, meaning a moist and soft cake texture. In this way, the matcha flavour will fill up your palate effectively. After a few trial and error attempts, I added much honey into the cake batter, and also substituted a portion of butter with rice oil. This drawing was made when the baked matcha cake finally became a success.
