Financier has a very interesting texture, unlike most of the other cakes. With the egg yolks being taken out, this cake was simply made from egg whites, brown butter, sugar, grounded almond and cake flour. A good financier should be very dense, so one has to avoid bringing too much air into the batter while hand-beating. The resulting cake should be crunchy and chewy on the outside, soft on the inside. (As I did not have a proper financier mould yet, I made the financier with a 5-inch pie mould instead.)
